Suzette crepes, the traditionnal french recipe!

You all know crepes, these delicious thin pancakes brought to us by France. But they have a real special recipe using them with butter and orange, and here it is :

- The crepes :
In a bowl, mix together the flour and the salt. Then add the eggs, the oil, and combine well. - If the batter is too hard to mix, you can pour a little bit of milk. Then, gradually add the milk, whisking everytime.
- Finally add the orange juice and stir. Cover the bowl and leave to rest for 1 hour.
- Suzette butter :
Mix the softened butter with the icing sugar to make a cream.
- Add the orange peels, the juice and the triple sec. Stir well. You should have some liquid that doesn't combine well.
- Heat a large pan, and apply a little bit of oil with a paper towel. Pour a ladle of batter, turn your pan so the batter is spread everywhere, then let it cook for 1 minute. Then turn it over, and cook for 1 minute as well. Then take it out of the heat.
- On each crepe, spread some Suzette butter, and fold it in 4.
- Cook quickly the folded crepes in a hot pan with some butter.
- There you are. Bon appétit!

What about the flambe???
In this recipe the crepes are not flambées!
