*Baked Turkey Burrito's with cabbage slaw
So this another one of my ugly baby recipes, yes I know its hideous but you have to love it because its delish. Its like the elephant in the room, I mean I know its one of my white-trash toss together meals but its really something I go to more often than I should. I love quesadillas, enchiladas and pretty much all things that involve tortillas, salsa and cheese. Its cheap, its easy its satisfying. With my dine-out boycott its the perfect meal for when my head is spinning and everyones screaming or crying etc. Its kind of a dirty little secret of mine. I often make these Mexican-a meals (Mexican-a in the cat dictionary: American-ized or cat-ified Mexican food, tex-mex?) To make this even easier instead of using my usual go to ready-made chicken I used leftover turkey from Thanksgiving. I'm pretty sure I saw somewhere that turkey's originated in Mexico so its really a traditional Mexican food. I figure this is actually a bit more authentic than I give myself credit for. Its not just an everyday burrito though, theres a few twists a long the way. Although its not "healthy" per say I do make a bit of an attempt at making it a bit better for us, so I did not use tortillas, not even whole wheat tortillas I used a lavash bread with whole wheat oat bran and flax. I found them at BJ's a while back and I kind of like them, I buy them from time to time so I figured I'd use them instead. I used half of a piece of lavash per each burrito. They really added a wonderful earthy flavor, its almost like theres mushrooms hidden in there but it was really just the the bread. Instead of packing them to the rim with gobs of rice, beans or whatever I simply mixed diced turkey with salsa, cajun seasoning and some cheese. I normally do like to do some rice or black bean puree but I don't really like buying beans in a can and I was in a rush. So I rolled them up and topped them with some watered down salsa and more cheese. I wanted to limit the cheese but man meat wandered into the kitchen asking why they didn't have cheese, and then it was "why is there so little cheese?" so I figured eh whatever and topped them off. Sometimes I just pick the cheese off to reduce calories but lately I just don't have the heart its so damn good. My favorite thing to serve with my baked Mexican-a dishes is tomatoes and a cabbage slaw, its crunchy and crisp and adds a creaminess that you would get from the normal sour cream topper. Its really just your usual cole slaw only I add horseradish, maple syrup, mustard and a bit more vinegar than most recipes. Ooey gooey and yummy. That pretty much sums it up. This is a simple no recipe type recipe. Its basic and you can substitute or add whatever you want. If you dont have cajun seasoning you can use a taco seasoning, cumin, chili powder etc. I like to use "gourmet" salsas, or fresh salsa when possible. I think the brand name is "pain is good" that we like. (has the screaming people on the label) 4-5 pieces of lavash bread or small tortillas 4-5 slices of colby jack cheese 2-3 cups diced turkey 16 ounce jar of salsa (divided) 2 teaspoons-3 teaspoons cajun seasoning Hot sauce (optional to taste) 2 cups sharp cheddar for the top Preheat oven to 400 degrees. Lightly grease/spray a baking dish. In a bowl combine diced turkey with half the jar of salsa and the cajun seasoning. Combine until mixed. Place about 1/3 cup of turkey filling into each wrap and place 1/2 slice of cheese on top. Roll up and place in the pan. Continue until you've run out of turkey or your pan is full. Take remaining salsa and mix with 1/4-1/3 cup of water and hot sauce if desired. Pour over top of the burrito's and top with cheese. Bake 15-25 minutes or until golden brown. Cabbage Slaw: 1/2 head of cabbage shredded 1-2 carrots shredded 4-6 tablespoons mayo (you can also use sour cream) 2 heaping teaspoons prepared horseradish 1 tablespoon coarse mustard 3-4 tablespoons vinegar 1 tablespoon sugar 1 tablespoon maple syrup salt, pepper combine mayo, horseradish, mustard, vinegar, sugar and maple syrup season with salt and pepper, stir to combine. Pour over cabbage and carrots. I make mine extra wet, if you prefer it more dry add more shredded cabbage. Allow to rest at least 20 minutes.
