*Blackberry Tiramisu Trifle

Well yesterday just happened to be my wedding anniversary. I made a wonderful dinner which I will post about later. For dessert I made these blackberry tiramisu trifles. I used a tiramisu flavored mascarpone cheese, slightly sweetened whipped cream, lady fingers and fresh blackberries to make this beautiful dessert. Everything is layered together and the cookies are moistened with cold coffee, this is a spectacular ending to any meal. Its easy to put together but absolutely stellar. Tiramisu has often been one of my favorite desserts but I've rarely actually enjoyed it! I'm not sure why I waited so long to try it but this was so wonderful it truly reminded me how far me and Stephen have come and I'm so glad to have him. Desserts like these are just making this journey together even sweeter!

Blackberry tiramisu Trifle:
1 package of tiramisu flavored mascarpone cheese
1 cup of cream (whipped)
2 tablespoons of sugar
1 pint of blackberries

lady finger cookies
cold coffee or coffee flavored liquor
unsweetened cocoa powder

In a bowl whip the cream until it forms peaks. I did it by hand but by all means utilize a mixer if you'd like. Combine with 2 tablespoons of whipped cream. Remove about 3/4 cup of the cream and set aside. Fold a small portion of the mascarpone cheese into the whipped cream and combine it. Little at a time combine the remaining mascarpone.

In a bowl or trifle dish layer lady fingers on the bottom. I used two bowls, and two juice glasses. If your using a trifle dish you should use a smaller one so that you have adequate ingredients. Saturate slightly with 1-2 tablespoons of cold coffee per cup, 1 tablespoon at a time for a larger vessel. You want the lady fingers to absorb the liquid but not become sloppy and soggy. Place some of the mascarpone cheese mixture on top of the saturated lady fingers. Then layer with blackberries, repeat this process until you've almost reached the top. The final layer will be the reserved whipped cream. Sprinkle the top with cocoa powder and garnish with additional blackberries.
