*Corn waffles with lemon & blueberry sauce
So as I've said before, my family is somewhat fickle with things they will openly accept on the breakfast table. This day was no different in the fact that I had to somewhat convince them to try these. I made these waffles with just a hint of corn meal and the blueberry sauce with a melody of citrus. The outcome? They ate them! To be perfectly honest I avoid making waffles as much as possible, I really hate them. I end up with mess all over my kitchen, spray on the cabinets waffle goop dripping down the counter and for what? these limp pathetic waffles? Although they are good in their own right I want crisp Belgian style waffles, to me a waffle is not a waffle unless its crisp and delicious, otherwise what you have is NOT a waffle but a pancake with indentations. Being as this is about my fourth waffle iron I've come to terms with my loss and just realize that unless the waffle fairy blesses me with a new one that does not steam my waffles i'm absolutely doomed. Stephens already boo hooing about this and that and "why didn't you just buy the other one!" Well, thats a good question man meat but last I checked it was your idea to buy this one. Huzzah!~ In all honesty THIS waffle iron looked like the winner in the crowd and I found it for a steal, it was literally one third of the price of the others. I guess I should have resisted the shiny bobble temptation, or is it just an owners error? I've cranked the heat, I've lowered the heat I've flipped them and let them cook longer, but still my waffles are steamed and soft. Why me? Well anyway... back to our regularly scheduled babbling. Although these were not crispy the flavor was knock your socks off slap you in the face with taste. I was satisfied with the lightness of the batter, even with the corn meal it was still fluffy. My primary concern when making these was that I'd have too much texture and the peanut gallery would start complaining about how I ruined their waffles with "flavorings". For the blueberry sauce I combined blueberries with sugar, lemon juice and orange juice to make this wonderful and perfectly sweet sauce. I loved it so much I even poured some over yogurt for an extra take on the deliciousness. The slight corn taste and the fabulous blueberry sauce was such a wonderful combination. I lucked out and everyone else loved them too! So my journey of waffles will not end here, as I do love me a good waffle I will make it a mission to try and master my giant sized waffle iron... did I mention the darn thing beeps? Annoying much? Corn waffles: 2 cups unbleached all purpose flour 1/4 cup corn meal 3-4 tablespoons sugar 3 eggs separated (whites beaten until stiff) 6 tablespoons melted butter 1 teaspoon vanilla 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1, 14 ounce can evaporated milk zest from 1 orange, 1 lemon (the juice is used in the sauce) In a large bowl combine flour, corn meal, sugar, egg yolks, melted butter, vanilla, baking powder, baking soda, salt and evaporated milk.Stir to combine. In another bowl or in your stand mixer beat the egg whites until stiff. Using a large spatula (scraper) gently fold the egg whites into the other batter a little at a time, divide the egg into about four portions and gently fold each part into the batter. *cook according to manufacturers instructions for your waffle iron. Blueberry sauce: 1 pint of blueberries 1/2 cup sugar juice of 1 orange and 1 lemon stir to combine and microwave about 5 minutes until the blueberries have burst and the sugar has dissolved. related searches : Corn
