*Hot Fudge Sauce
For as long as I can remember theres been something oddly comforting about hot fudge sauce. Although I'm not a devoted chocolate fanatic I do really appreciate a good hot fudge. This sauce is absolutely perfect to stash in your refrigerator. This is a wonderful all purpose sauce. You can mix it with milk for a wonderful and delicious hot chocolate (or chocolate milk) Then of course you could it over ice cream for the worlds best ice cream Sundays, its even good for dipping fresh fruit in. (fondue anyone?) The best part about this recipe is that it can be made in the microwave and within 10 minutes time your ready to go, armed with a delicious, smooth and rich chocolate sauce. Hot Fudge Sauce:1/2 cup semi sweet chocolate chips 1 ounce bittersweet chocolate 4 tablespoons butter (1 tablespoon reserved) 2 tablespoons cocoa powder 2/3 cups whole milk or heavy cream 1/3 cup sugar 6 tablespoons corn syrup 1 tablespoon corn starch 1 tablespoon of rum or brandy (you can use 1/2-1 teaspoon of rum extract or omit this altogether) In a microwaveable dish combine all ingredients except 1 tablespoon of butter and the brandy or rum. (you can do this on the stove top but over very low heat and constant stirring). Microwave one minute at a time stirring in between each minute. Once the mixture is smooth it will only take a few extra minutes. This should take approximately 5 minutes total to thicken. It will thicken further as it cools. Place in the refrigerator until needed. To re-heat microwave 10 seconds at a time. Perfect for: Hot chocolate, chocolate milk, ice cream sundays, or fondue related searches : Hot
