{Rain or Shine}

By The Travelling Tastebuds (Visit website)

This is the weather I woke up to this morning… beautiful glistening rain in all its glory.  I absolutely adore the rain… the rain means so much to me… it means… hot chocolate… tea… soup… warm crackling fire… rain boots… see what I mean???  Of course… this has not always been the case.  I used to associate rain with prison… and litter… and depression… and the color gray.  The mind is a powerful thing… it can completely change your outlook on life.  So the next time you are confronted with a negative thought… encourage yourself to see the beauty in the situation… smile… do things that you wouldn’t normally do otherwise… and maybe it’s just not as bad as you thought.

After church this morning… my family and I went out for lunch at Thanh Duoc Restaurant.  I ordered one of my favorite vietnamese dishes… bun thit nuong with a side of fried egg roll.

I only wish this one had a bit more veggies… usually it comes served on a bed of fresh herbs and veggies… but this was mostly meat & noodles.  I am not complaining… I just like my greens :)

On the side is fish sauce with a bit of chili sauce for some spice… I generously incorporated {okay… I poured the whole damn thing}… the fish sauce into the bun thit nuong to make one awesome dish.  Nom nom!!!

After lunch… I made my way to the gym for a little workout.  This weekend I’ve decided are my rest days from running… so I opted for the elliptical machine for an hour.  I think I did an awesome job!!!  My incline was set at level 9 and the resistence alternated between level 8 & level 12.  At the end… I burned 600 calories and got my heart rate up to 160.  Oh man I love working out!!!  It’s such an adrenaline rush… I honestly don’t know how I ever lived without it before!!!  Enjoy the rest of your weekend :)
