Ingredients : Pasta - 250 gms (penne/spaghetti/fusilli) Onions - 2 (large) Fresh tomato puree - 6 (medium) Garlic - 10 cloves (chopped) Dried red chillies -1 tsp (crushed) Oregano - 1/2 tsp Parsley - 1/2 tsp Basil - 1/2 tsp (fresh or dried) Salt - to taste Olive Oil - 3 tbsp veggies you could add : Bell peppers Broccoli Baby corn Mushroom Zucchini Garnishes : Black/Green olives Grated Cheese - if desired Procedure : Drain the water and set the pasta aside to cool. Heat oil in a deep frying pan and add finely chopped garlic cloves and chopped onions. Sauté till it turns soft and translucent. Add black pepper, oregano, basil, parsley and red chilly flakes. Now add tomato puree and mix. Add salt. Cook till the oil starts to separate. Stir occasionally. Now add the chopped vegetables. Sauté for 5 mins and then add the boiled pasta. Mix carefully so as not to break the pasta. Garnish and serve hot. PS : Soak mushrooms in hot water for 10-20 mins with a pinch of salt before cooking. It cleans and removes the dirt easily.
