?Just Add Beer? Chicken
Mmmmm… beer! It doesn’t happen often in our house, but a super-sized can of Budweiser was the star ingredient of tonight’s dinner.
“Just Add Beer” Chicken Inspired by Glamour’s recipe (February 2010) Ingredients: 2 tbsp butter 1 pound of chicken (approx. 3 breasts) 2 tsp minced garlic 2 bay leaves 2 small potatoes, chopped 1 cup chopped carrot 1 cup chopped celery 1 cup chopped onion 1.25 cup beer 1/2 cup apple cider vinegar 1/2 cup chicken broth Salt and pepper to taste Directions: Melt butter over moderate heat in a medium-size saucepan. Season chicken with salt and pepper and place in pan. Cook for 5-7 minutes or until fully cooked. Add onion, carrot, celery, potatoes, garlic, and bay leaves to pan. Then add beer, vinegar, and broth. Cover and simmer over low heat for 25 minutes. Serve with brown rice or crusty bread. Makes 3-4 servings
On the side, I whipped up some Multi Grain Rice, which was a combination of sprouted brown rice, black pearl rice, and millet. The texture was super sticky (almost like oatmeal), but it tasted delicious. There was no need for additional flavoring and it went perfectly with the chicken recipe.
Yum!!! Amazing meal! And, it was so easy to make! Set it and forget it! Mal raved non-stop about dinner. At one point, he even said: “Eating this makes me so happy!” And, he was more than willing to take some of the leftovers for lunch tomorrow instead of his usual PB & J sandwich. This recipe is a keeper!
For dinner, Mal and I used our handy-dandy TV tables that I won from the Boboli recipe contest last year.
While eating dinner, Mal enjoyed the Star Trek movie while I tried not to watch. (Sorry, Mom! I told him it wasn’t allowed!)
I’m on the fence about dessert tonight. My stomach is satisfied, but my sweet tooth is not. Maybe some sweet tea and/or a Jazz apple will do the trick? Or maybe a batch of Oatmeal Raisin Bars?
