15 Minute Creamy Avocado Pasta...
O.M.G... Found this awesome recipe on one of my favorite blogs: Oh She Glows and had to share it with you!!! Angela's photos are much more spectacular than mine but the recipe is the real star here... I LIVE for cream sauces but the high calorie content normally makes it a rare special treat.... This creamy avocado pasta had all of the creaminess of a heavy cream based pasta... AND IT'S HEALTHY... And delicious.. And we both licked our plates... And dinner was ready in 15 minutes... Here's the recipe!!! Ingredients: 1 medium sized ripe avocado, pitted 1/2 lemon, juiced & lemon zest to garnish 2-3 garlic cloves to taste (we used 3 and it was deliciously garlicky) 2 Tbs. Extra Virgin Olive oil 1/2 tsp. kosher salt, or to taste 1/4 cup of fresh basil (we had basil paste and used 2 Tbs) 2 servings of your favorite pasta (we used whole wheat spaghetti) Freshly ground black pepper, to taste Directions: 1. Bring several cups of water to boil in a medium sized pot. Add your pasta and cook until Al Dente. About 8-10 minutes. 2. Meanwhile, make the sauce by placing the garlic cloves, lemon juice and olive oil into a food processor. Process until smooth. Now add in the pitted avocado, basil & salt. Process until smooth and creamy (I just added everything in... Oops!.. Still worked great!) 3. When pasta is done cooking drain and rinse in a strainer and place pasta into a large bowl. Pour sauce over top and toss until fully combined. Garnish with lemon zest and black pepper. Makes 2 servings.
