200th Post ? 2 min Microwave Chocolate Cake

There are probably ten different variations of this quick chocolate cake on the internet, but I chose the interpretation here. Have you had days where you feel you absolutely have something rich and chocalatey? Its this itch on the back of your mind and also your taste buds. It was one such day….and as always I did a random search and landed on a number of 2 minute chocolate cake recipes..It made me wonder, is it truly possible? But, the good thing about this recipe is the time is short and so is the ingredient list, which made me think it is worth experimenting. I’m glad I did.


Ingredients:

3 tbsp unsweetened cocoa

4 tbsp granulated sugar

1 tbsp flour

3 tbsp milk

3 tbsp canola oil

1 egg white

1/2 teaspoon vanilla

1 tsp chocolate chips

pinch of salt


Method:

Place all the dry ingredients – cocoa powder, sugar, salt and flour in a tall coffee mug. In a glass measuring cup, blend the liquid ingredients: oil, milk and the egg white and vanilla. Use a fork and blend it all together. Add the wet ingredients to the dry, incorporating with strokes of the fork. Beat it for about a minute. Top with the chocolate chips.


Place in the microwave oven and cook on high about 1 minute, 15 seconds. It really depends upon your microwave. I’ve tried this recipe about 3 times now, the first time I cooked it for 2 minutes in one shot and ended up with burnt chocolate flavor. 1 minute 30 seconds was still a little rubbery. 1 minute 15 seconds was perfect..Kind of a molten lava cake texture.


As you can see from the pictures above, it puffs up beautifully, like a souffle when it cooks, but deflates immediately after it comes out. It may overflow in some coffee cups…so be prepared. :)


I served mine with some whipped topping and an extra sprinkle of cocoa powder. YUM!



Verdict: Chocolatey goodness that takes 2 minutes to make..how cool is that? You could even make this an impromptu dessert for unexpected dinner guests. Also would make a really fun cooking project with kids.
