21-day Vegan Challenge (Day 3) - Raw Breakfast Porridge
Breakfast is the most important meal of the day they say. For me, breakfasting is really important as I cycle to work 10 km and I am afraid that after that, I would eat a horse (which is not vegan, so I cannot :-(
Usually I eat muesli and yoghurt or soy milk, but since I am on my super duper 21-day Vegan Challenge, the yoghurt is out of question.. Therefore I need something light, but filling. A combination of nuts, seeds, dried fruits or fresh fruits and oatmeals - a digestive friendly superfood... The best thing is that there is no rule to this one and so you can have it everyday without feeling like crying: "Bleh, porridge agaiiiiin?" RAW BREAKFAST PORRIDGE:appleoatmealswaterraisins or other dried fruitsseeds or nuts(sugar)Easy peasy, the night before grate and apple and mix with the oatmeals (1:1 ration or something like that). Add chopped dried fruits, nuts or seeds and mix well. Add some sugar if you want, but trust me, it is not necessary. Cover everything with water. Let sit for an hour or so and then transfer to the fridge overnight to soak it all up. In the morning, treat yourself for some good ol nutrition! this will definitely pump you up with lots of energy for the day ahead.
