Last night was the first night of Hanukkah. I wasn't going to attempt Latkes because my (non Jewish) husband actually makes them a lot better than me. Also we have a tradition in this interfaith home, our Christmas dinner always consists of ham and potato latkes. This started a few years back when the holidays fell on the same day. Anyway, as the night went on I felt the need to have some latkes on the table but knew they had to be a different kind of latke. I checked the fridge and then looked online and found a recipe that incorporated the head of cauliflower I had in the fridge and the leftover mashed potatoes that needed to be used. I made Cauliflower Potato Latkes. I veered a bit from this recipe because I needed a healthier version. I browned them in the pan and them put them in the oven to finish cooking. I thought they were good, they were more of a mashed potato cake than a latke (probably because I didn't fry them a lot.) The kids enjoyed them - Sweet Girl actually ate three!
