A Picnic

By Cooking for Oscar (Visit website)

Last weekend we went to see Window in the Willows at the Botanical Gardens, and took a picnic.  So what did we take?  I wanted to try something new as Oscar is typically not very keen on picnic fare, so I made pin wheels, which I know he has made at day care.  Chicken and ricotta ones for Mum and Dad and ham and cheese for Oscar.   They went down a treat with everyone.  As we have an abundance of zucchini's at the moment, I also made a zucchini dip from a recipe I found on all recipes.

Cream Cheese, Zucchini and Chive Dip (Moderate Salicylates, Low Amines, Low Glutamates)

I've used a food processor to make this dip to chop the zucchini even finer, but its not necessary, you could make it by hand.

250g light cream cheese, softened3 tblspns low fat milk1 cup peeled and grated zucchini, squeezed to remove excess liquid3 tblspns chopped fresh chivesGenerous pinch of salt2 cloves of garlic, chopped

Zucchini Dip

Add the milk and cream cheese to a food processor and whiz for a few seconds until well blended.Add the garlic, salt, zucchini and chives and whiz again until well combined.Chill in the fridge for at least an hour before serving.
