A POW Creation!
Hello all! I hope you’re having a great Hump Day! No, stop thinking dirty! It’s the Hump in the middle of the week! It’s been a fantastic day so far! Especially for me, because I renewed my gym membership!! YAY!! So guess where I’ll be headed at 6am tomorrow morning! I’m super excited! I may even run into The Fitnessista! Dinner tonight was a creation from my very own noggin! And, best of all, it includes this week’s produce item..Pears! Not to mention, it’s healthy, of course! Ginger Chicken with Pears This is a very simple recipe. I prepared this on my lunch break today, for which I’m usually home about 30-40 minutes….and I still had time to feed the dogs, and veg out for 5-10 minutes. So that should give you some idea of the prep time. I used a whole chicken, 3 anjou pears, ground ginger, curry powder, ground thyme, a little black pepper, and about 1/2 cup of water. Clean the chicken and empty the insides. I kept the skin on only for cooking purposes. Mix all the spices together, and rub some under the skin…careful not to rip it. Then rub some on the outside, and then some inside the cavity. Then the chicken is ready. Slice the pears coarsely so they don’t turn to mush in the crock. (My index cutting board was dirty. Then put them all around the chicken in the slow cooker. And sprinkle the remaining spices over the pears. (I used a 6 qt.) The water could really be cut in half or even eliminated if you feel safe doing that. The juices of the pears really come out. This is what it looks like after cooking on high for 4 hours. (Otherwise, cook it on low for about 8 hours). The house was pleasantly fragrant with ginger/curry when I came home from work! The verdict: This was, overall, a tasty dish. I think next time I would cut down on the water and maybe even stuff the chicken with the pears. I’d also use more curry, and maybe even some cumin to add a little more spiciness.
