A Quiet Sunday

We were going to have left over pizza from Giovanni's for lunch and then BJ said he was feeling kinda blah. We checked his temperature and he seems fine at a steady 96 degrees and there are no other symptoms, flu or otherwise. I just think he's tired and needs some rest. Flopping on the couch and watching TV may just be the remedy he needs. 

Now, back to lunch. The leftover pizza, albeit tasty sounding, didn't seem like it'll be the nourishing meal to revitalize his energy. Instead, I made chicken noodle soup. Since I wasn't planning on making homemade chicken soup, I had to use ingredients already on hand in the pantry and fridge.
I threw together the soup with 2 cans of Swanson's low-sodium chicken broth, 2 cans of water and tons of veggies - garlic, carrots, zukes, and onion. I defrosted a few chicken breasts and thighs and cooked them with some EVOO in the wok before transferring the meat to the soup. I could have just put the chicken into the boiling soup, but I figured the grilled meat would add a nice depth of flavor since I wasn't using homemade stock.
For noodles, I made two batches. Plain extra wide egg noodles for BJ and Tofu Shirataki noodles for me. 
I boiled the noodles separately in the wok, although the shirataki noodles just required reheating.
The chicken noodle soup was hearty and did the trick. We both feel rejuvenated and am ready to tackle the day, even if it just means puttering at home doing chores. But I do plan on going for a run at the lake before it gets dark.
