Adopt a Gluten Free Blogger - Book of Yum
I was honored this month to serve as guest host for the Adopt a Gluten Free Blogger event that was created by Sea over at the Book of Yum. This is my second time hosting, and I am always glad to help Sea out. One of the advantages of hosting is that you get the first pick of all the wonderful GF bloggers out there. And so I was delighted to pick none other than the very creator of this event, Sea!
Sea has been blogging GF/vegetarian for number of years now, with the support of her devoted DH, and, more recently, the adorable Baby Yum! In my opinion, she is one of the premier GF bloggers. Her recipes are always creative and run the gamut from breads to salads to desserts, as well as a wide variety of cooking cultures (Asian, American, Indian, European,etc) and her website makes it easy to search for exactly what you are looking for. And what I was looking for was blueberries. A quick search on her site, and I found what I was looking for - Gluten Free Lemon-Blueberry Muffin Nostalgia. Sea published this recipe back in 2007, Inspired by a muffin blogging event, this recipe is a great example of Sea's creativity, and you really need to view her original recipe to see it. I only made the muffin part, which was fabulous. One way I deviated from her original recipe is that I did not add the 1/3 cup of milk that Sea listed as optional, and I should have done so to lighten the batter. The flavor is delightful - there is just something about the marriage of blueberries and lemon! And the kids - well - the harshest critics in the house devoured these for their night time snack last night and their breakfast today with glee. As if the muffin is not enough, Sea's original recipe includes a cream cheese frosting and a garnish of frozen banana slices and fresh blueberries that I did not have time to prepare, but really seem to enhance the recipe and make for a terrific presentation. It's hard to believe this is the first time I have tried one of Sea's recipes. It definitely won't be the last. I am hoping to have the February Adopt a GF blogger roundup posted in the next day or so. I've looked at a couple of the entries that have been posted - you won't be disappointed. related searches : Adopt Blogger
