Good Afternoon and Happy Monday! It is a wonderfully misty day here in Austin and I got a chance to run in the mist before teaching class and then my hubby met me for an hour long walk. My legs are feeling nice and tight and a bit tired and I am going to squeeze in a weight circuit before the day is out. But first I have to tell you about my new favorite dessert! It is semi-healthy and soo good. The Fage Truck was out at Central Market over the weekend giving out samples. I am so excited because it is coming to my local HEB this Friday. Go to their website www.fageusa.com and see when one of their trucks will be in your area. They give out nice big samples with your choice of 0%, 2% or Total Greek Yogurt with the following toppings: Cherry Peach Strawberry Honey So I went for 2% with the Cherry topping and it was awesome! You know that I am a huge fan of Fage Greek Yogurt and pretty much eat it daily but after having the rich and creamy 2% greek yogurt with the Cherry Preserves it occurred to me that I could have the 0% for breakfast and snacks and buy the 2% for desserts and dress them up with a bit of fruit preserves maybe even some shaved dark chocolate and that it would be so much healthier for me than my Dreyer's Slow Churn Yogurt Blends with god knows what chemicals and fillers are in there. This is not a new discovery but just one that I am going to try to make a habit. So last night I had a bowl of 2% Greek Yogurt with Bon Maman Raspberry Preserves topped with fresh raspberries and it was so rich and creamy and a bit sweet and sugary (in a good way) and it cured my sweet tooth and I got in a whopping 15 + grams of protein in. Gotta love it. So I am going to try to have this for dessert all week and see if yogurt really can become my favorite dessert. Breakfast today was a super delicious bowl of Plum Almond Chia Oats. This bowl was crazy good today. I am really enjoying the addition of chia seeds to the oats and it was just a great day to start off with oats. Plum Almond Chia Oats 1/2 cup rolled oats 1/2 cup Silk Heart Health Vanilla Soymilk 1/2 cup of water 1 tbsp of chia seeds Combine above ingredients and cook over medium heat for 4- 5 minutes. Remove from heat and top with: 1 black plum, diced 1 tbsp of slivered almonds 1 tsp honey Enjoy! Lunch was the best now that my fridge is stocked with Food for Life Ezekiel English Muffins. Phew, I was starting to get a little panicky there for a few days. I made a Pear and Swiss Melt on a Cinnamon Raisin Ezekiel English Muffin. This was freaking amazing! A very Fall- like meal. Pear and Swiss Melt on a Cinnamon Raisin Ezekiel English Muffin 1 Food for Life Ezekiel English Muffin 1 tbsp dijon mustard 1 Red Silk Pear, sliced 2 slices 2 % Milk Reduced Fat Swiss Cheese Spread english muffin with dijon mustard, sliced pear and swiss cheese. Bake in toaster oven for 2-5 minutes or until cheese is melted and slightly bubbly. Enjoy! Wow! I loved this combination and can't wait to have another one. This would be a great breakfast as well. The sweet and savory combo was outstanding! Yikes! It is time for me to get ready to pick up the kids already. Have a great afternoon and I will check back with you later.
