Almond joy
Today was the reverse of yesterday. I began feeling better as the day went on. When my alarm went off at 6:00 this morning, I got up, and laid right back down. Typically I'll get right up and do yoga, pilates or go for a run, but not this morning. I felt like dynamite was going off in my sinus cavity. No fun. After I finally did drag myself out of bed around 6:45, I had this wonderful bowl of almond joy (sans coconut) for breakfast:
1/3 cup oats1/3 cup vanilla almond milk1/3 cup waterSplash of vanilla1 tsp cocoa powderCocoa roasted almonds1 tbsp almond butterDo I really need to say anything? I think the picture speaks for itself. Chocolate and almond or peanut butter is my all time, hands out favorite taste combination. I do believe next time I'll melt the almond butter to drizzle over top! The CEO of my organization came out to one of my clinics today to do an employee forum, so I was shakin' in my boots for the most of the morning. Everything went fine. I always laugh at myself after these types of situations are over with because of how nervous and panicky I become right before it's GO time. I guess that's just natural. I had a huge report to do for both clinics (and I hate having work related things hanging over my head over the weekend so I'd rather finish them asap!) so I didn't make it home until around 1:30 for lunch. Luckily, my almond joy oats held me over all morning long. I came home and decided to make a grilled apple sandwich. I simply sliced up a gala apple and threw it on the Foreman. How pretty are they?! I love the stars in the middle of apples. My inspiration actually came from this month's cover of Southern Living. He was quite intrigued by my sandwich! Who needs a quarter pounder when you have an apple stack? I obviously had to spread the apples out so I could fit it in my mouth :). It was really good. A very nice play on flavors. I did begin to feel better as the day went on. I'm feeling pretty good right now, so hopefully I'm officially on the mend! I believe Thad is feeling better too. Once I got home from work, I had snacked on some dried apricots and Kashi Go Lean straight from the air tight container (they're air tight!!). I didn't snap a picture since I was just going to have a bite or two, but I ended up having quite a bit more than that! After I ate way too much Kashi, I decided I felt good enough to go on a walk. So, I walked my normal 3 miles. It felt really nice outside. Once home, I was ready for a dinner. I've been craving tomato soup since I've been under the weather, so I finally gave in! 1 cup tomato soupDried sageFresh basil (my garden!)Feta cheeseSpring mix + tomato + hot sauceEzekiel toast + hummusSo good and filling.
