Aloo Anda Fry /Urulai Muttai varuval

As i was browsing thro' kairali sis's blog ,somehow i got piqued over 2 dish. Am gonna give out the recipe of this one first, then will post the other one once i make it. Seriously, i've  never given a thought of mixing eggs with potato..But the pics were so scrumptious and i got easily flattered to this one.. It was good actually.. Thanks, kairali sis !!



Ingredients :

Potatoes -- medium -- 2 nos.
Eggs -- 2 nos.
Dry red chilli -- 2 nos.
Shallots --big -- 2 nos.
Garlic -- 3 cloves
Peppercorns -- 1/4 tsp
Kashmiri red chilly powder 1/2 tsp (optional)
Mustard seeds --1 tsp
Curry leaves --2 sprigs
Oil -- as reqd
Salt -- to taste

Method :
Boil the potatoes to almost 90%. peel it and make into big cubes. Boil the egg for 10 mts and peel the outershell and cut those into big cubes as well. Now grind dry red chilli ,shallots,garlic,peppercorns, kashmiri red chilli powder all these and make into a coarse paste without adding water. U may want to pulse it to get that coarse paste.Since my mixie stopped working, i bought myself a blender for timebeing. So had to grind it .. Heat a kadai and add a little may be 2 tsp of oil. Season it with mustard seeds,followed by curry leaves. Dump the coarsely pulsed paste,salt and scald well. Cook this till u din't feel the raw smell of the shallots and it's mixture. At this stage,dump in the cubed potatoes and combine well. If u feel the potato needs to be little bit cooked, u may add 1/4 cup of water and let it boil along with the masala. U may add the cubed eggs once the mixture is almost dry. Scald well so that every single eggs and potato has the masala coating. Stir once more and sprinkle with coriander leaves and serve.
