Aloo Chaat & Raj Kachori
Aloo Chaat You need 4 potatoes, boiled 1 ½ teaspoon cumin seed powder ¼ teaspoon black salt ¾ teaspoon garam masala powder ¾ teaspoon red chilli powder 1 teaspoon mango powder 2 ? 3 teaspoon mint chutney 1 teaspoon lemon juice 4 teaspoon pomegranate ( sweet ? for garnishing ) Oil for frying Salt to taste Method Cut the potatoes into thin cubes and fry them on a hot griddle, using a little oil till they are red in colour. Put the potatoes in a bowl. Sprinkle all the masalas, add mint chutney and lemon juice. Mix well. Garnish with pomegranate seeds. Serve hot. Raj Kachori Ingredients 250 g maida ( all purpose flour ) 100 g semolina ( suji ) 100 g gram flour ( besan ) 1 teaspoon red chilli powder ½ teaspoon salt Oil for frying For filling : 100 g black channa ( sprouted ) 100 g dal moth 1 teaspoon ginger, finely chopped 1 teaspoon mango powder 1 teaspoon red chilli powder ½ teaspoon garam masala ¼ teaspoon cumin seed powder ½ teaspoon black salt Salt to taste For the garnishing : 200 g curd Shallow fried paneer cubes ( optional ) Tamarind chutney Method Roast besan in a pan for a few minutes on low flame. Add salt and red chilli powder. Knead into a dough. Mix maida and suji and knead into a dough. Make a ball, flatten a little and fix a ball made of besan in it. Roll and fry in hot oil. When it puffs and turns pink in colour , remove from the heat. Now mix sprouted channa, dal moth , ginger , mango powder, cumin seeds powder , black salt and salt well. Make a hole in the kachori. Fill in the mixture . Pour curd and tamarind chutney. Garnish with paneer cubes. Serve immediately. related searches : Aloo
