Aloo Gobi ki Subzi (Potato & Cauliflower)
Aloo Gobi is one of my absolute favorite North Indian dishes, to be exact, my third favorite. You may recall this dish from the famous movie, "Bend it Like Beckham", where Jasminder (played by Praminder Nagra) is playing with the cauliflower head, while her mom is trying to teach her how to make "Aloo Gobi." There are a number of variations on making this dish. Aloo Gobi goes best with roti. NUTRITION: Cauliflower is an excellent source of Vitamin C, Vitamin K and Fiber. It is a very good source of Omega 3 Fatty Acids and Folic Acid. INGREDIENTS: Oil - 1 tbspGarlic - 2 cloves (chopped) Ginger - 1 inch piece (chopped) Onions - 2 medium (chopped) Cauliflower - 1 (cut into florets) Potatoes - 2 medium (peeled & diced into cubes) Chili Powder - 1 tsp Dhaniya Powder - 2 tsp (more if needed) Turmeric Powder - 1/2 tsp Coriander Leaves - handful (chopped) Salt to taste DIRECTIONS: 1. Chop the onions, ginger, and garlic. 2. Chop cauliflower into florets. 3. Peel and cube potatoes. 4. Heat wok on medium heat. Add oil. Add garlic and saute for 30 seconds. 5. Add onions and salt. Saute until golden brown... will take about 5 minutes. 6. Add the cauliflower and potatoes. Add chili powder, dhaniya powder, turmeric powder, and salt. 7. Cover and simmer on low-medium heat for 20-30 minutes. The steam will cook down the cauliflower and potatoes. Keep checking and stirring in between. 8. Once the cauliflower and potatoes are fork tender, taste it to be sure, the dish is fully cooked. Turn off the heat. Add chopped coriander to this dish. The coriander will bring out the flavor of the dish. related searches : Aloo
