Amazing oats and a giveaway!
I knew before going to bed last night that it would be bitterly cold this morning so I made sure I had a hearty breakfast ready to dig into after my Level 2 Shred workout. I have been on a chocolate cherry overnight oats kick for quite sometime now, but I knew I was going to need something different today. Let me introduce you to Pumpkin Pie Overnight Oats… Oh yes – they are as good as they look! And I had a mug of orange juice because I really heart orange juice and one glass in the morning isn’t going to kill me. After I took these picture I posted them to my facebook page and the comments just kept coming. “How do you make those?” “That looks delicious!” “Why have overnight oats instead of just instant packages?” I knew instantly that tonight’s post would be dedicated only to Pumpkin Pie Overnight Oats. I’m sure tons of bloggers out there make pumpkin oats and they are wonderful. I also know that overnight oats is nothing short of spectacular and ever since I came across them in the blog world I couldn’t look back. So here’s how I made mine… Mix in a bowl right before going to bed and place in fridge overnight: 2/3 c old fashioned rolled oats 2/3 c vanilla almond milk 1 tbsp ground flaxseed meal 1 tbsp cinnamon In the morning stir the oats then top with 1 scoop almond butter, 2 scoops canned pumpkin and heat in the microwave for about 45 seconds, stir then heat again for an additional 45 seconds. Remove from microwave, top with a palm full of pecan pieces and sprinkle with unsweetened coconut. ENJOY! My tummy was full for hours! Now – onto an awesome giveaway. Remember the other night when I told you the girls and I had Noodles and Co for dinner? Well I was contacted shortly after that post because I went on and on about how much I love the tofu there (cause I do!) and how yummy my meal was.
