An Almond Slice of Heaven
These almond slices are a cross between cake and cookie…which was a very good thing considering when I made them I couldn’t decide which I wanted to make…so I got the decision made for me. I know it sounds odd that I didn’t know what I was making before I made it, but this recipe comes from that magic cookbook I told you about last week. The one from my great grandmother’s sister’s husband (did I lose you there?). This recipe is spectacularly easy to make and will hold up well if you like to tinker with recipes. I fully intend on playing with this one a little more over the next few months. But for the first time I wanted to make it exactly as written. Another bonus is it only uses 9 ingredients, one mixing bowl and one pan. In my world, that’s a major score! I also thought the name was really cute: Almond Slices. I cut these small so that I could have them with tea. It’s also easier to eat more of them (with less guilt) when they are cut into smaller bars. The smaller size is also more manageable to dunk into your coffee than a larger square of the cake/cookie. Relationship Advice Remember when you were younger and you played your first game of 7 minutes in heaven? Remember the nervous excitement you felt as you went into the closet with your crush? It’s a shame that we can’t keep that same kind of excitement in our relationship with our partner. But you can help revive some of those butterflies. How about spicing up your sex life? Why not open up your cupboards and refrigerator and look for some tasty little things to bring into your bedroom (think “9 1/2 weeks”). Just a couple of suggestions: honey, chocolate syrup, whipped cream, frosting…I think you get the idea. Have fun. Makes one 8″ x 8″ pan Ingredients 1 Stick Unsalted Butter (cut into pieces) 1 Cup Powdered Sugar 4 Eggs 2 Cups All Purpose Flour 1 Teaspoon Baking Powder 1 Teaspoon Almond Extract 2 Tablespoons Granulated Sugar 2 Tablespoons Ground Almonds 2 Teaspoons Cinnamon Directions Preheat oven to 375 degrees Farenheit. Combine the sugar, ground almonds and cinnamon in a small bowl and set aside. In a mixing bowl combine the first 6 ingredients. Beat until all ingredients are fully incorporated. Line an 8″ x 8″ baking pan with parchment paper. Spoon batter into baking pan and ensure that batter is level and smooth. Bake for 25 minutes or until a toothpick inserted into the middle of the cake comes out clean. Cut into bars or squares while still warm.
