An indian feast; part 2 + part 3 all in ONE.

Sorry I'm so slow at the moment, here are parts 2 and 3 for you to make the FEAST.
Part 2 is the mint coriander chutney bit to dip the potato cakes in.

You'll need:
1 bunch of fresh coriander
1 bunch of fresh mint
6 cloves of garlic, chopped
a 1" piece of ginger
2 small green chilies
1 tsp caster sugar
1/2 tsp salt
2 tsps lime juice

Cut the roots of both bunches of herbs, peel the garlic cloves and the ginger, and remove the stalks from the chilies. Run them all under the tap just incase there's any grit hanging around.


Put everything into a food processor for a few seconds until you've got a chunky chutney. Chill while you make the rest.


Part 3 is Aloo Tikki, fried potato cakes stuffed with a spiced pea mixture, oh YEAH! 

This is the most complicated part, but also the most satisfying.

You'll need:
3 large boiled potatoes (peeled)
salt and pepper

For the stuffing:
2/3 cup frozen peas (defrosted for a few seconds in the microwave)
1/2 tbsp finely chopped ginger
1/4 tsp garam masala
a sprinkle of chili powder
1tsp cumin seeds

a little oil


Defrost the peas for a few seconds in the microwave until soft. Mash them up with a fork then add all the other stuffing ingredients (not the oil) and mix thoroughly. 

Mash the potatoes until they're reallyreally smooth. Add salt and pepper to taste.

Divide the potato and the pea into 10 equal portions.


Rub your hands with a little oil, then pick up one of your potato portions. Squish it together so it's a hard ball. Flatten it slightly, then push your finger into the centre and put in your portion of pea mixture. Pinch the sides together over the pea mix so it's completely covered, then re-flatten into a pea filled disc.

Do this with all 10, then heat 1 tsp of oil (not olive oil) over a low heat, if it's not low they'll burn. Fry 3-4 at a time. You need to leave them for a few minutes undisturbed while they bind otherwise they'll just fall apart when you try to flip them. 


When they're golden brown, they're done.

Here's all three things together, NOMNOM.
