Arbi Curry/Arvi Curry/Arbi Sabji/Seppankizhangu Curry/Chamadumpa Curry

Ingredients:

500 gms Arbi/Taro
1 medium Onion sliced
4-5 Green Chilies slitted
3 tsp Ginger-Garlic paste
2 tsp Coriander powder
2 tsp red Chili powder( or as desired)
2-3 Cloves
5-6 Curry Leaves
Salt to taste
4-5 tbsp Cooking Oil

Method:

Pressure cook Arbi.As soon as you remove it from flame, strain the Arbi and wash it with cold water.
Peel the skin after it gets boiled,cut it into slices and keep aside.
Now heat Oil in a Kadai/Non-stick Pan.
Add Cloves,Onions,Green Chilies and saute it until the Onions turn light brown.
Now add the Ginger-Garlic paste and fry for 7-8 secs or until the raw smell is gone.
Then lower the flame,add Coriander Powder,Red Chili powder,Curry Leaves,Salt,Arbi and mix well.
Add approx 2 cups of water and cook in medium flame until it gets the gravy consistency.
Serve with steamed Rice,Dal/Sambar Rice.
