Arbi Patra or Dhokla ( Stem Colocassia leaves snack)
Ingredients 8 to 10 pics Arbi(colocassia) leaves, 1 1/2 cup Besan (chick pea flour), 2 tbsp Ginger-Garlic-Green chili paste, 1 tsp Coriander and Cumin seed powder, 2 tsp Chili powder, 1/8 tsp Asafoetida powder, 2 tbsp Tamarind pulp mix with jaggery(Thick paste) or 1 tbsp Lemon juice, 1 tbsp sugar or palm sugar, 1 tbsp oil, 1/2 tsp Fennel seeds, A 2 Pinch of Baking Soda, Water as needed, Salt to taste, 1 tbsp sesame seeds, # For Tempering: 3 tbsp Oil,10 curry leaves, 1 tsp Mustard seeds, 1 tsp Cumin seeds, Grated Coconut for Garnish, Method: Wash and cut the Colocassia/Arbi leaves. Slice off the thick portion of the stalks with a sharp knife and put aside. Make a paste of all the ingredients listed under ingredient. Add to this tamarind mixture and enough water to make a paste which can be spread easily. Spread over a leaf, face down, in a thin layer, leaving a narrow margin all around. Place another leaf over this and repeat the besan application. Do the same with two more leaves. Tuck in the edges along the length and roll like a scroll.Repeat with the rest of the leaves. Steam patra rolls for 15 minutes When cool, slice into 1"- 3" thick slices and put aside.Put oil in fry pan and hit the oil and add cumin,mustard,sesame seeds and curry leaves. now put patra rost 2 minutes take out and Sprinkle shredded coconut.Serve with tamarind chutney. related searches : Arbi
