Are you there Oprah? It's me, Caroline!

Look who I've been rubbin' elbows with this week! You all know him; the Scrub-dawning, Oprah fawning, sculpted bod show-offing...None other than Dr. Oz! Who really is, quite the handsome fella in a suit and tie! A few students, and one of our fabulous Chef's catered the Green Garden Gala, put on by Health Corps. An expo featuring an array of health professionals and individuals debuting product for a good cause.  But back to the Oz...A cordial, and hungry host he was, made his way over to introduce himself and snap a few photos with us lowly Culinary Students. I was hoping to spot a little lady by the name of Oprah, but she must have been with her posse back in the Windy City... I even considered slipping a card or 12. But that would have been unprofessional. ;)

I couldn't believe the situation I had created for myself, here I was. Catering this fancy pants event, hosted by Dr. Oz. Serving delicious, Vegan fare, next to the likes of Pure Food and Wine and Candle 79 to name a few. The opportunities unfolding are beyond my wildest dreams. 
Here are some of the Hor's d'oeuvres we served. 
Spiced flatbread with a Pinenut Ricotta, Herb Pesto and Caramelized onion
Hijiki Caviar wrapped in Phyllo
Mini Tempeh Reubens with Pickled Cabbage and Swiss Chard
Chocolate cups filled with Lemon Curd and Blueberry Coulis

I have so much respect for the professionals in this industry. The amount of prep that goes into preparing such a consummate bite is beyond belief. The art of the Hor's D'oeuvre is something I have come to appreciate immensely this past week. Essentially, creating the perfect experience, the perfect balance of flavor, texture, and excitement in one disposable, yet addictive pop. Well, that's the idea of course! 

The night was a hit, and the bites were a poppin'! Girly was piping Ricotta under the tables for service! We had such great feedback from the guests, it was so great to see so many people enjoying our efforts. 
I'm talking, hijiki poppin' and tempeh noshin' going on all night! And they loved it. 
I guess seaweed is a bit more approachable in a tiny phyllo package, and even tempeh becomes "cute" on a nickel-sized piece of toast!  Either way, it was a fabulous experience. 

I had to step back a few times throughout the night and take it all in, really see and believe what was going on around me. Here I was in the middle of this $1500 a pop Gala, feeding Dr. Oz's posse. Could this really all be unfolding before me? It was. It is. 
I have never had such a huge expanse placed before me, it's unreal. Scary, even. This is where it all begins, this place is so unsettling but so completely necessary at this point in time. I have felt so much energy shifting beneath me, within me that can only lead to greatness. Whatever it is, it will be great. 

In other news, as of this month, I will begin writing and contributing to CitySearch's new Vegan Food Blog and Look-book: Veggie Thing ! 
Launching officially come May 6th, it will serve as the Go-To place for vegan's and foodies alike. I will be scouring the city streets for delicious eats, debuting them in fancy light. Myself, along with some other fabulous contributers will be working hard to bring you all the best of the best from across the country! Keep your eyes peeled, and check it out.

The time has come kids, It's back to the bright lights and middle fingers of this beautiful city.
