Arugula, Potato, Chive and Leek Soup
In our house this has pretty instantly become known as Green Potato Soup. It was FABULOUS! Very potato-y and I love a good potato. When I was doing missionary work in Las Vegas I had a girl that I worked with from Idaho. Let me tell you, she took her potatoes SERIOUSLY. She had her mom send her boxes of potatoes from home, she was that picky about her potato products. I think this soup would make even her happy. It was that good.
The main difference in how we made this soup was that we blended the soup after we added the arugula instead of before. It made a beautiful green soup that the boys thought was less iffy looking than having little arugula bits floating around in it. Other than that, I thought a little bit of mustard seed might be just the thing the next time we try this. You can find the recipe here at The Herb Companion.
