Asopao de camarones, a puerto rican style shrimp stew
We all have our version of comfort food; for me that is Asopao de Camarones, which is a Puerto Rican style shrimp stew. Since childhood, anytime I had a bad time or was not feeling good (like today. I was in a car accident yesterday and was rear-ended, and my body is feeling it today), I always asked my mom to make me the asopao?. And she always made it. This "stew" is a lighter version of what you consider a stew here in the U.S. It is simply delicious and so tasty. It will make you say "Mmmm". Here is the simple recipe: Ingredient 1 cup medium-grain rice 2 tbsp sofrito (when in a hurry we use Goya's recaito) a dash of pepper salt to taste 1 tbsp garlic powder 2 bags of frozen cooked shrimp (41-60) Directions Fill a medium saucepan 3/4 of the way with water. Add the rice and cook on medium high until the grain is opened. Add the recaito, garlic, salt, pepper, and half of 1 shrimp bag. Let it cook for 15 minutes. When the liquid starts thickening, add the rest of the shrimp and cook for 10 more minutes and serve. We usually serve this with tostones, or fried plantains. This recipe is as comforting as my mom's hug. So in those moments when my mom's hug will only do and she is not around, I grab a bowl of asopao and I feel like she is giving me a hug. And now that the temperatures are starting to cool off, this is the perfect dish to bring some warmth into your day. Buen apetito.
