Asparagus Salad
Germany is asparagus crazy at the moment. They absolutely love it. Little asparagus stalls pop up around the city during Spring. The white asparagus is especially something special for them, normally eaten boiled with hollandaise sauce. In the supermarkets there are even huge asparagus peeling machines. So living in Germany, of course we had to buy some. The only problem was, we didn’t know what to do with them, neither of us have really eaten much asparagus, so this time we bought the green type. Now we know that we are just as crazy about them as the Germans – we will definitely be more adventurous and buy the white or even purple asparagus, next chance we get. I searched for a recipe after we bought a great looking bunch at the Friday market. Asparagus risotto sounded amazing, but we were looking for something a bit lighter as the weather is so warm at the moment. One of my favourite food blogs had a great recipe for an asparagus salad, trusting her judgement we made it. Smittenkitchen really couldn’t be more right about this salad. It is so light and refreshing, you won’t want to do anything else with your asparagus. We varied slightly from her recipe, using almonds instead of pine nuts – only because it was a sunday and that was all we had in the cupboard. Also if you remember to use parmesan cheese, it is even better – we only remembered after we had eaten half of it, although it is also delicious without.
