Asparagus Spinach Salad

Good Evening!

No clients this evening, everyone seems to be crazy busy or not feeling well. It gave me time to hang out and eat dinner with the family tonight. Everyone had a little something different, Emmet and Steve went for Gumbo and Zoe had Sushi Wraps and I made a delightful salad using leftovers once again. I am on a roll, I am determined to not waste food and I tend to overbuy so am working on that as well. I hate to waste food.

Asparagus Spinach Salad

2 cups chopped baby spinach
Cucumber Slices
Radishes
Leftover Asparagus Salad

Yum! These was so good and I love the pinenut dressing on the aspargus dressing. I will definitely be making this again and again.


My afternoon snack was one of my all time favorites:

Fage 0% with Cherries and Pomegranate Seeds

1/4 cup of Fage 0% Greek Yogurt
Chopped Cherries
Pomegranate Seeds
Sprinkling of Barbara's Shredded Spoonfuls
1 Himalania Goji Berry Almond Crunch- crunched



Super, super satisfying snack. How I love the greek yogurt bowls. I don't know if I mentioned this or not but I picked up the HUGE container of Fage 0% Greek Yogurt at Whole Foods. So I will be enjoying my little bowls all week long!

And last but not least, I ended up having a "healthy dessert". I was debating between having a Mesquite Chocolate Chip Cookie or a Go Lean PB & Banana Waffle. I was really wanting a banana and was worried the cookie would lead into two or more cookies so I opted for my mini breakfast dessert. So Yummy!



Go Lean PB & Banana Waffle

1 Go Lean Strawberry Flax Waffle
1/2 tablespoon Naturally More Peanut Butter
1 small banana sliced
Drizzle of honey

My kitchen is officially closed for the night except for maybe a cup of Tulsi Tea but all in all I think it has been a very good day of eats. I am going to design my Interval Class for tomorrow and then get a good night's rest. My hubby just found out that he has to travel again next week and I tend to sleep better when he is home (not sure why... the security or just knowing that there is two of us to watch over the kids) so I am going to take advantage of having him around.

I also got to try some of the skin care products that I got today. I love Vivite Vibrance Therapy. It really helps my 40 year old aging spots. For all you young girls, please wear your sunscreen, as you age all that sun damage comes back to haunt you... I am fair skinned and the freckling and sun damage is really showing up on my skin. Besides food, I love products! or I should say facial regimes and have tried many, many lines. I can honestly say that two products that I actually think work and are really, really worth the money are Vivite Vibrance Therapy and Skinceuticals CF Phlorentin.
