Aunt Kay's Frozen Fruit Salad

Every Christmas Aunt Kay made this Frozen Fruit Salad.  Everyone just loved it.  Aunt Kay was my husband's Aunt.  Kay was married to his uncle Lewis who was his dad's twin brother.  The two sister-n-laws took turns making Thanksgiving and Christmas dinners every year.  When I joined the family 33 years ago I remembered this dish from my first Christmas with my new family.   I think of Aunt Kay every time I make this salad.   Remembering how how sweet and welcoming she was to me when I joined the family.  We all really miss her a lot.  I hope you make this salad for your family and love it as much as we do.




Ingredients!



Drain both cans of fruit and put into a large bowl.



Chop cherries and add into fruit salad along with their juice.



Cut and add bananas to the fruit along with chopped pecans.



Add two heaping tablespoons Miracle Whip to fruit and nuts.



Fold in the Miracle Whip.



Beat heavy cream with two teaspoons of powdered sugar until stiff.



Fold whipping cream into fruit and nuts.



Put mixture into mold and freeze.




To unmold salad place if the refrigerator for 1 hour before serving on out on the cabinet for thirty minutes so the it will slice easier.









Aunt Kay?s Frozen Fruit Salad

2 cans of fruit cocktail, drained
4-5 oz jar maraschino cherries & juice, chopped
2 bananas, cut up
½ cup pecans, chopped
2 heaping tablespoons of Miracle Whip
½ pint whipping cream, whipped with 2 teaspoons powdered sugar

In a large bowl put the drained fruit cocktail.  Add in the chopped maraschino cherries,  bananas and chopped pecans.  Mix in the miracle whip.

In a separate bowl, beat whipping cream until stiff with 2 teaspoons of powdered sugar. 

Fold whipping cream into fruit and nuts.  Pour into a mold and freeze.
(My mold is Tupperware and is great for this recipe)

To unmold ? leave in refrigerator for about an hour so you can slice it.
Or leave out on cabinet for 30 minutes, then slice.
