Australia Day-Work to Live not Live to Work

Public holidays are just one of the things that make Australia great. While we have been accused of being a nation of highly relaxed individuals (aka bludgers) the statistics indicate something entirely different.


Australians are working longer hours than ever before, coming third in the world after Japan and America. What a shame this is. While work is an important part of a balanced existence, we live in one of the most beautiful countries in the world (with fabulous weather into the bargain) and what are we doing? Spending our days indoors!


This Australia Day, we urge you all to clean the BBQ, get out the picnic basket and dust off the Esky and go outside. Whether you hit the beach or the bush, one thing is certain, you will be connecting with the unique Australian environment, just like the Aboriginals who inhabited this continent for 40, 000 years, the immigrants who struggled to adapt to it and today?s population who has finally managed to live in harmony with Australia?s harsh extremes.


To help you get started, here is a recipe for BBQ Octopus so easy and so delicious!  Be healthy, have fun and let me know if you had anything unusual to eat on Australia Day.


Summer BBQ Octopus


Ingredients


300 ml red wine


2 tbsp balsamic vinegar


1 kg baby octopus, cleaned


juice of 1/2 lemon


Method



Place wine and balsamic vinegar in a saucepan with octopus.
Bring to a boil, reduce heat to low and simmer for 35 minutes or until softened.
Drain octopus and place in bowl.
Heat the BBQ to high and grill octopus for about 5 minutes, turning occasionally, until cooked or lightly charred.
Place octopus in a bowl and season with salt and pepper and drizzle with extra virgin olive oil and lemon juice.
Serve with BBQ Ratatouille or salad of your choice.
