Avocado and shrimp
When you see that avocado is in a recipe do you think ?Oh Healthy!? or ?High Fat/Calories?? I know that avocado is good for you, but I can?t deny the fact that when I see it in a recipe I automatically think that it?s going to be high calorie. Dan on the other hand saw this recipe and thought that it would be super healthy and low calorie.
Of course I was right, but so was he partially (on the healthy front). 400 calories for a salad isn?t so bad for a meal salad and this was really fresh and filling (thanks to all that healthy fat). The lime dressing really brought out the rest of the flavors. I have to say lime dressing has replaced ranch as my favorite. (But that might just be a summer thing) What is your favorite dressing?
Shrimp and Avocado Salad Adapted from Real Simple
Ingredients: 1 lbs shrimp 3 T lemon juice 3 T olive oil 1/2 t honey 8 c spinach 4 chopped plum tomatoes 1 avocado, sliced Instructions: Cook the shrimp until it is opaque.
Stir together the lemon juice, olive oil and honey. Add salt and pepper to taste. Combine the shrimp and dressing with the spinach and tomatoes.
