Baby Potatoes in Honey Chilly Sauce
I think anything with honey chilly sauce tastes awesome. Here I have used baby potatoes and shallots in this recipe. You can use any other vegetable with it. But the combination of baby potatoes and shallots is very delightful not only to the eye but also to taste. This is a wonderful side dish and tastes really awesome. Again this is very simple to make.It rarely gets left over for the next day no matter how much you make it. It is one of those dishes which disappears quickly from everyones plate and you wonder if you should have made more every time. Ingredients (Serves 2) : 1/2 packet baby potatoes boiled 1 cup shallots 1/2 cup honey 6-7 red dry chillies 2 tsp finely chopped garlic 2 tsp finely shopped ginger 1spring onion 2 tsp chopped coriander 1 tsp soya sauce 1 tsp black pepper powder 1 tsp red chilly sauce Salt to taste 2 tsp oil Method : First take the peeled whole shallots and cook them till they are caramelised in a pan in 1 tsp oil. Once they get caramelised remove from the pan and keep separately. In the same pan put 1 tsp oil and saute garlic and ginger. Then add the chillies and the boiled potatoes. Use the same pan as this would have lot of flavours left by the onions. Saute till they get a bit brownish. Undercooked baby potatoes taste bitter. So cook these well. Then add the caramelised onions to the pan and mix wellThen add the honey and red chilly sauce, soya sauce, salt and pepper and cook well for about 10 minutes.Add the green part of spring onion and chopped coriander.
