Baby Vanilla Chai Latte Cupcakes!


I forgot to blog about these way back when I made them for sweet Carolyn?s party. They were sorta delish. And cute.


(Makes 30 minis)


1 1/2 cups of cake flour


1 1/4 tsp of baking powder


1/2 teaspoon salt


1 teaspoon of vanilla extract


1/2 cup unsalted butter, room temperature 1 cup truvia or stevia 1 egg plus 2 egg whites


1/3 cup of almond milk


1 tablespoon of chai tea latte liquid mix (I use Tazo or Oregon Chai)


Buttercream Icing:


1/2 cup of benecol butter (lighter oil base)


1/2 tsp. vanilla extract


1 cup powdered sugar


2 tsp of liquid chai latte mix


1/2 tbsp of cold almond milk (to thin out icing)


I used liquid chai tea mix for mine because I didn?t have any cardamom at the time and this was cheaper to buy! ;) Ha, but if you have all the spices for the chai mix, you can use those and just bump the almond milk up to 1/2 cup. If your mix seems too thin, you can always add a little more flour. I kind of learned as I went on these and improvised, but as long as the consistency is good they should turn out lovely!


Preheat oven to 350 degrees F.


Sift the flour, baking powder, and salt together into a medium bowl.


Cream the butter and sugar together with a mixer or by hand until well combined. Add in egg and egg white, beating in between each one until thoroughly mixed.


Ration in the flour mixture, almond milk, and liquid chai latte mix, beating in fragments.


Spray your mini cupcake pan with canola oil, until each up is well covered.


Fill each cupcake hole 3/4 of the way full with batter. Pop in oven for about 14-16 minutes.


Use a toothpick to check if ready, then take out and let cool for 5 minutes. Then, slowly pop them out onto a plate.


Blend the ingredients for the icing in a mixer. Also, if you?re not up for homemade icing, the store bought stuff is an easy alternative.


Dash the top with some cinnamon or pumpkin spice and there you have it! Delectable little treats that will disappear in a bite. :)
