Baco Noir

By Suzanne: Trying to Maintain (Visit website)

Hi everyone!

Prashant and I spent Saturday at home. Sad to say, but my back has been hurting since Friday afternoon so I've been trying to take it easy. My husband and I tried to make the best of our time at home by cooking a romantic Italian dinner for 2. We started things off with a small pour of wine. This is an awesome Canadian wine given to us by my husband's cousin last week. The wine is called Baco Noir, which means that it's a hybrid red wine grape made from 2 different kinds of grapes (according to Wikipedia). I'm not a wine expert, but I do know a good wine when I taste one, and this definitely was a good wine, high in antioxidants that left my tongue purple! Prashant's cousin is the sweetest for giving us such a great gift!!

For dinner we made a basil and tomato sauce and added onions, garlic, red bell pepper, lots of red pepper flakes, Italian seasonings and soy crumbles (for some protein). We ladled the sauce over whole wheat noodles and then added fresh mozzarella cheese and basil on top. We also had a simple salad of romaine, cucumbers, radish and carrots. Enjoyed with another glass of wine, of course.

My plate up close...

Round 2! I was still a little hungry after finishing the first plate, so I went back for more...

Just because... I brought these flowers home for my husband on Friday. He's been pretty stressed out the last couple of months and hoped that these would brighten his day.

Glass #3...

I sipped all 3 glasses very slowly over the course of a few hours. It was nice to have a date night at home and everything was perfect... the food, the wine and, most importantly, my date!

Today is my hubby's brother Ritesh's birthday... Happy Birthday, Ritesh! We're all meeting for lunch at a restaurant to celebrate in a short while, so I kept breakfast light this morning. I toasted some sourdough rye and topped it with Smart Balance.

I'll be back later with photos from lunch!
