Bacon, Camembert and golden syrup piled on corn fritters - heaven on a plate!
Bacon.......Camembert and syrup must rank right there at the top of my favorites-things-to-eat-list! Let me begin by saying, this recipe is not for the faint-hearted....it will not be found in any diet manual, come to think of it, eating a meal like this, should be considered illegal! Nothing this good can be enjoyed without any consequences. This meal was planned in the car on my way back from my second radio programme today, it was created out of necessity, but wow, what a feast it turned out to be!
The recipe for the corn fritters I "developed" in a few seconds and I must say, it tasted darn good! As they say, the one sin normally leads to another sin, so as my planning went on in my mind, the meal got more and more sinful with every ingredient added...Bacon, Camembert and then the copious amounts of syrup the we drizzled over it!! We loved the crunch of the fritters, the gooyeness of the cheese and then the crisp, salty bacon on the top! This meal will be perfect for a lazy Saturday morning breakfast or for a light supper like we had it last night. One last thought, play with the quantities of the flour, mix and match! The difference in textures that you will find, could be quite interesting! Corn Fritters with Bacon, Camembert and Golden Syrup Makes 12 fritters Ingredients 1½ cups plain flour 1 cup mealie meal 1 cup dry polenta salt 4 tsp baking powder 330 ml beer or soda water oil for frying 1 410gr tin of corn kernels or use fresh if you have - drained 250gr streaky bacon - cooked until crispy 1 small ripe Camembert cheese golden or maple syrup for serving Method Mix all the dry ingredients for the fritters, add the beer or soda water and stir. If it needs a little more liquid, just add a little water. Add the corn and mix through.Heat enough oil in a pan and fry spoonfuls of the batter until golden brown. When the fritters are done, drain on kitchen toweling and call the family, these babies need to be eaten warm. Place a slice of Camembert on each fritter and allow the cheese to melt and become all creamy and gooey. Top with the bacon and drizzle some golden or maple syrup over the top. Yum!
