Bacon 'n' Egg Breakfast Pasta

**This just in, what I am calling breakfast pasta is really just carbonara. It just sounds more fun calling it bacon 'n' egg pasta.

Owen and I have a pretty good morning routine going for ourselves.  He wakes up between 6:30 and 7:00, I feed him his oatmeal, grab a banana, and we head to the gym.  We get home, he naps, and I shower-clean-blog-etc, but not always in that order.  Like right now, I've yet to shower or clean.  I usually make myself a protein shake too. 

After a 7 mile run this morning (that's a long run for me), I was famished and craving a hearty-meaty-eggy kind of breakfast. You feel me? A light shake wasn't going to cut it. 

So I made this bacon 'n' egg breakfast pasta.  Yes, pasta for breakfast. It's no weirder than eating leftover pizza for breakfast, and  I know we've all done that a time or two (right?).  Trust me on this one, it's good.  


 
Bacon 'n' Egg  Breakfast Pasta
(one serving)

1/2 cup uncooked whole wheat pasta
1 egg
1 slice of cooked turkey bacon, crumbled
1-2 Tbs Parmesan cheese
Extra Virgin Olive Oil and Salt & Pepper to taste


1).  In a small bowl, lightly beat the egg then stir in Parmesan cheese, and a dash of salt and pepper.
2).  Cook your bacon, crumble, and set aside.
3). In a medium saucepan, bring water to a boil and cook noodles until al dente.  
4). Pour into a strainer. Reduce heat to medium.  Spray the bottom of the saucepan with non-stick cooking spray, return noodles to saucepan, and place back over heat.   
5).  Stir in egg-cheese mixture.  Cook for 1-2 minutes until the egg is scrambled. 
6).  Once plated, drizzle with a little EVOO and top with a sprinkle of Parmesan Cheese. 

You can always add another egg, or more bacon, or even reduce the amount of pasta.  Whatever suits your fancy.


Now, since it's almost noon, lets talk dessert shall we? I need your help.  My husband nonchalantly threw two big jars of Nutella in our shopping cart while at Costco this weekend.  We really don't need to be buying Nutella in bulk for the two of us. And I really don't need TWO jars of Nutella sitting in our cupboard.  It is disappearing by the spoonfuls.  That's what happens when I'm at home most of the day and know it's just sitting in there.  I need to put it to use, bake something.  

Does anyone have a good recipe with Nutella for me to try?  We've got friends coming over tonight and I can pawn the goods off on them.  After I eat my share.
