Badam Peda/Almond Fudge,Candy and Sabudana Chivda/Sago Savoury Snack
Festivals r related to fastings n feasting...Being a devotee of Lord Shiva and Lord Shri Krishna,as sawaan starts we fast on mondays (monday being Lord Shivas Day) and Today was Krishna Janmashtami(Birthday of Lord Krishna).To celebrate both these occasions we do fast whole day and feast evening time with delicious fasting menu Sago Khichadi,Basundi,Moraiyo Rice and Peanut Dal,Moraiyo Khichadi fruit salad and many other fasting treats like these two yum dishes(Sago Chivda/Badam Peda)and break the fast midnight by offering prayers aand later enjoying nonfasting treats . Badam Peda/Almond Candy/Fudge- U need: 3/4 cup Toasted ground almonds 3/4 cup sugar or more 3/4 cup grated homemade Khoya..can use ricotta cheese 2-3 tblsp NonFat Dry Milk powder 2-3 tblsp Milk..or as required 1 tbsp ghee Few threads of saffron..optional Cardomon powder/Elaichi powder-1/2 tsp (green cardamom) Sliced /Whole almonds to garnish. Method: In a pan,add Khoya, sugar and milk powder and cook stirring continuously till it thickens a bit.abt 12-15mins.Add toasted ground almonds,a tblsp of ghee, saffron (dissolved in little warm water) mix well, cook til it thickens ,add milk as required and mix and keep stirring til it forms a soft dough/ball ,add elaichi powder and remove from flame in a bowl. Let it cool a bit and then take small portions and form into round balls and flatten it.decorate with sliced/whole almonds as garnish. U need- Nylon Sabudana/Sago/Tapoica Pearls - 1 cups(it becomes double in size after frying,i.e almost 2 cups) Green chillies - 2-4 ,chopped Raw Peanuts - 1/2 cup or less Powdered Sugar - 1tblsp Salt to taste Oil for frying Cashewnuts,raisins..optional Method: Heat oil in a deep pan.Deep fry peanuts til light brown.Drain on a Paper Towel. In the same oil deep fry green chillies til crisp n brown.Keep a cover near by as it splutters.U can discard the seeds and then fry.. Keep them aside. Finally Deep fry Nylon Sago till they puff up and r double in size. Add little by little dont add all together as some may remain uncooked and chewy.Dont brown.Drain on paper towels. Add all(puffed up sago,fried peanuts,fried green chillies)in a big bowl.Add salt and sugar.Toss well.Let it cool completely and then Store it in an air tight container.Stays good for 10-12 days.
