Baguette Pizza

Remember when french bread pizzas were all the rage?  I used to love them - although the roof of my mouth always ended up burned and scraped from the super-hot sauce and the crispy crust on the bread. 


The other night, I threw a little housewarming party, and I needed something fun to serve as an appetizer.  I didn't want anything too elaborate, and it needed to be handheld and incorporate the local cheeses and vegetables I'd purchased that morning.  I settled finally on a variation on the french bread pizza theme.  This is something you can easily throw together at the last minute, and the presentation is really pretty.  Plus, the possibilities for toppings are endless - you can really do so much with this.




I chose to do a vegetable caprese/margharita pizza and an apple, honey, bleu cheese pizza.  I figured this would appeal to lots of different palates and age groups (in fact, I was pleased to note that the kids who were there most enjoyed the apple pizza - stinky bleu cheese and all).




Ingredients
serves 8 as an appetizer
2 baguettes, halved lengthwise
1 zucchini, halved lengthwise and sliced very thinly
1 yellow squash, halved lengthwise and sliced very thinly
1/2 pint cherry tomatoes, halved
1 lb. fresh mozzarella, thinly sliced
8 fresh basil leaves, cut into chiffonade
Salt and Pepper to taste
1 apple, thinly sliced
4 oz. bleu cheese, crumbled
Honey, to drizzle


 
For the Veggie Caprese/Margharita Pizza
Begin by preheating your oven to 375F.
Layer the squash and zucchini in an overlapping pattern on two of the baguette halves
Top with mozzarella slices
Sprinkle this with basil
Top with tomato halves, cut side down
Sprinkle with salt and pepper


For the Apple, Honey, Bleu Cheese Pizza


Begin by layering the apples in an overlapping pattern on two halves of the baguette
Top with bleu cheese crumbles
Drizzle with Honey


Place all of the pizzas on foil lined baking pans.  Bake in your preheated oven until cheese is melted and browned on top.  Allow to cool and slice each baguette half into four evenly-sized pieces.
