Baked Orzo
Last night was crazy. I worked longer hours than I usually do so I came home and started cooking right away. I usually like to sit for a few minutes but because it was already so late, I had no rest time. That?s where this side dish became really helpful. I prepared it first and popped it into the oven for the 30 minutes that it required. Since that?s all it involved I was able to forget about it and clean up a bit before preparing the main dish. It?s really helpful to have side dishes that I can put in the oven while I cook the rest of the meal!! Baked Orzo Source: Adapted from Just Pasta Recipes 1 small box of Orzo, cooked 2 Eggs, beaten ¼ cup Bread Crumbs ¼ cup Pesto ¼ cup Parmesan Cheese, grated ¼ tsp Pepper 1 large Tomato, chopped 1 clove Garlic, minced 1 cup Chopped Frozen Spinach, thawed and squeezed dried 15 oz can Garbanzo Beans, rinsed and drained Preheat the oven to 350 degrees MIx all of the ingredients together and pour into a greased casserole dish. Cook for 30 minutes, it should be heated through and the top should be starting to brown. related searches : Baked
