Baking Muffins with a Newborn
I tried my best to stock my freezer with food for breakfast, lunch, and dinner before baby girl arrived. However, some times I still want something freshly cooked. Today I made raspberry muffins for breakfast. (This recipe comes from Good and Cheap Eats.)
1 c. unbleached flour 3/4 c. whole wheat flour 2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp salt 1/2 c. sugar 1/4 c. oil 1/2 c. milk 1/4 c. yogurt (I used vanilla because that is what I had on hand. Plain would work just as well) 1 egg 1 c. fruit Dress baby on a cute "I love mommy outfit" Put baby in boppy on kitchen counter so she can watch (just make sure to keep a good eye on her!). Preheat oven to 350. Line muffin tins with baking cups. If you don't have a mix pre-made, mix together dry ingredients Or pull baking mix from the pantry. Add wet ingredients. Stir to blend. Fold in fruit. Make sure to keep an eye on baby. If your wiggles as much as mine, she will work her way out of the boppy if you let her. Fill muffin cups just shy of full (they will rise some).
