Banana and Raisin Pancakes /Mini Pancakes aux Raisins secs et Bananes

Pancakes remind me about my trip to Minnesota (USA), some years back, where I tasted the pancakes for the first time? (Thanks to C (a) and K for that delicious breakfast ;-)

As the holidays are nearing and also because A (one of my friends) had asked me if I had any quick no-fuss holiday recipes for teatime....the thought of this recipe stacked among the others since quite some time came to my mind and thought it would be the ideal one to enjoy with kids, family and friends.... hope you like it A !! :)



It goes without saying that all of us love it at home and these soft and fluffy pancakes are so easy to make unlike any other snacks like cakes or cookies, which may require some elaborate methods? Usually people prefer relishing it with whipped cream and berries but my favourite ones are honey, maple syrup, jam and sometimes simply sugar? hope you enjoy !!!



Ingredients/ Ingrédients: (for 20 baby pancakes/ pour 20 mini pancakes)



4 eggs/ 4 ?ufs

100g brown sugar / sucre cassonade 100g granulated sugar/ 100g sucre semoule

500g all purpose flour / 500g farine de blé

4 tbsp oil/ 4 c. à soupe d?huile

500ml milk / 500ml de lait

14g baking powder / 14g de levure chimique

1 pinch salt/ 1 pincée de sel

4 bananas/ 4 bananes

4 tbsp Brown Rum / 4 c. à soupe de rhum brun

40g raisins / 40g raisins secs

Juice of half a lemon/ jus d?un demi ciron

40g butter/ 40g beurre



Method/ La préparation:



Heat the rum slightly and pour it in a bowl along with the raisins and let the raisins soak and swell for about 20 minutes.

Faire chauffer le rhum et le verser dans un bol, sur les raisins secs et laisser gonfler pendant 20 minutes environ.



Whip the eggs in a bowl like we do for the omelets, add the sugar and salt and continue whipping. ( I used a mixer to do the work)

Dans un bol, batter les oeufs en omelette et ajouter le sucre et le sel et continuer à mélanger énergiquement. (J?ai utilisé un mixeur pour cette étape)



Add the oil and the milk and continue whipping.

Ajouter l?huile et le lait et continuer à battre le mélange.



Sift the flour and the baking powder in a separate bowl without any lumps and add it little by little to the egg mixture while stirring gently to get a homogeneous batter. (Over mixing makes the pancakes tough!!!)

Tamiser la farine et la levure et les verser petit à petit au mélange précédant (?ufs/lait/huile) tout en mélangeant pour obtenir une pâte lisse et homogène. (Eviter de trop mixer la pâte, car cela rendra les pancakes un peu durs)



Strain the raisins and add them to the batter. Cover the bowl with a damp cloth and leave it at room temperature for about 2 hours.

Egoutter les raisins secs et ajouter à la pâte. Couvrir le récipient avec un torchon humide et laisser reposer à la température ambiante pendant 2 heures environ.



Peel the bananas and slice them evenly into round pieces and sprinkle some lemon juice.

Peler les bananes et les couper en rondelles. Arroser les d?un peu de jus de citron.



Heat a griddle, add a knob of butter and place a slice or two of the bananas and pour one or two tablespoons of the batter and cook for 2 minutes on one side, flip and cook another two minutes on the other side.

Faire chauffer une poêle et disposez- y une noisette de beurre et une ou deux rondelles de bananes. Verser deux cuillerées de pâte et faire cuire pendant 2 minutes sur une face, tourner et faire cuire encore deux minutes sur l?autre.



Repeat the same for the rest of the batter and enjoy./ Faire pareil pour le reste de la pâte et déguster tiède.
