Banana Baked Oatmeal

Who knew a diet would consist of eating so many oats?  After hauling home a 10 pound container of Quaker Oats from Costco last week, I'm pretty sure it is safe to say that we have eaten more different types of oatmeal in the past week than in my life!



Not only that, but trying to figure out ways to make oats taste good without adding tons of sugar is an additional challenge.  One of the many recipes I whipped up in the last week was surprisingly tasty, healthy, and man pleasing!  He actually liked it!  Better than the pumpkin yogurt I tried to make... 



Part of eating less sugar means no more Yoplait, favorite!  So I've been trying to figure out a way to "like" plain yogurt.  I had a can of pumpkin and some pumpkin pie spice in the cabinet, and thought - "hmm, my dear hubby sure likes pumpkin pie, maybe I'll take that approach."  Let me just say, don't try it! 



Try this though!





Banana Baked Oatmeal

2 Ripe Bananas, sliced

2 cups Rolled Oats

1 tsp Baking Powder

1/4 tsp Salt

1 Ripe Banana, mashed

1 Egg, beat

1 1/2 cups Milk (As always, I use skim)

1 tsp Vanilla

1 1/2 tbsp Brown Sugar



Preheat oven to 375 degrees.



Combine all ingredients except for the two sliced bananas, and mix thoroughly in a large bowl. 



Line a small baking dish (I used a round tart pan) with parchment paper.  Why?  It will make this recipe much more enjoyable, trust me, no sticking!  Spread out one of the sliced banana on the bottom of the pan, and then pour the batter on top of the sliced banana layer.  Lastly, spread the last sliced banana over the top of the mixture or make a design!





Bake in your preheated oven for 25 minutes.  After 25 minutes, turn the oven to broil, sprinkle the brown sugar over the top and bake for another 3 minutes.



Beautiful and delicious!





Just pull the oats out of the pan in the parchment paper, and cut with a pizza cutter.  At least you'll get some use out of that pizza cutter, we've found out quickly that it doesn't get much use anymore!
