Banana Blinis A La Tina
What a breakfast!!! I found this recipe in Self magazine (March 2009) the other day. (Supposedly, it’s Anna Kournikova’s recipe.) The original recipe made 18 blinis, which was WAY too many for me, so I halved the recipe and made some minor changes to it.
A blintz, blintze or blin (plural is ‘Blinis’ Russian) is a thin pancake. It is somewhat similar to a crêpe with main difference being the fact that yeast is always used in blini, but not used in crêpes. I topped my blinis with banana slices and maple syrup. They were SO GOOD! The blinis were soft and sort of chewy like a crepe, but thicker like a pancake. Holy yum! Banana Blinis A La Tina Makes 8-9 Ingredients: 1 egg Directions: Mix egg, milk, sugar, and salt in a mixing bowl. Add vinegar, flour, and baking soda. Mix well. Melt butter (I used Olivio) in medium skillet over low to medium heat. Pour a thin layer of batter into the skillet. Fry until golden. Flip and repeat. Top with sliced banana and maple syrup. Banana blinis with half of a glass of iced coffee– I drank the other half while cooking blinis! The lighting in my apartment stinks! It’s not doing this amazing breakfast justice!
