Banana Chia Pancake with Fresh Berries
Good Afternoon and TGIF! I completely forgot that it was a two hour delay start time at school this morning and that I did not have to get up and get going as early as I did! Thankfully, I remembered before waking up the kids but they woke up anyways and it just gave us more time to hang out and make pancakes this morning. I actually made Banana Chia Pancakes topped with Fresh Banana and Berries and they were delicious and nutritious! Banana Chia Pancake with Fresh Berries 1/2 banana mashed 1/3 cup rolled oats 2 egg whites 1 tsp baking soda 1 tbsp chia seeds Cooking Spray Heat a skillet over medium heat that has been prepped with cooking spray. Combine batter and pour into skillet. Cook for 2-3 minutes and then flip and cook another 1-2 minutes. Remove from heat and top with: 1 tbsp peanut butter 1/2 banana slices Fresh Blueberries and Raspberries This was an awesome pancake and it combines all my favorites: peanut butter, oatmeal, egg white, bananas and berries. I made another swing into the grocery store in search of Food for Life Ezekiel English Muffins and still no go. What is going on people? I am going to have to make a trip to Central Market this weekend to see if I can find them there. So with all my extra time this morning, made myself workout before teaching. I got in a tough weight circuit and am now going to work on my yoga sequence for tomorrow mornings class. Any local readers, I will be teaching the 8:30am class tomorrow morning at Hill Country Fitness. Come check it out. It is going to be a fun and challenging class with a lot of core work, backbends and inversions. Lunch was my go-to meal, Crunchy Pumpkin Parfait. The weather is fantastic today, very Fall-like and I have got my comfy jeans on and a light long sleeved shirt and it just seemed like a good pumpkin day. Crunchy Pumpkin Parfait 3/4 cup Fage 0% Greek Yogurt 1 tsp honey 1 tsp pumpkin spice 3/4 cup Go Lean Crunch Cereal, split 1/2 cup pure pumpkin Combine yogurt, honey and spice. Top with half of the serving of Go Lean Crunch and then layer with the pumpkin and top with the remaining cereal. Enjoy! I am seeing all sorts of great recipes with pumpkin in them and saw a scrumptious pumpkin dessert that I want to try. Ginger-Chocolate Crunch Pumpkin Pie SERVINGS: 8 servings 1 15-ounce can pumpkin 1/3 cup sugar or sugar substitute* equivalent to 1/3 cup sugar 2 tablespoons honey or pure maple syrup 1 1/2 teaspoons pumpkin pie spice 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, lightly beaten 1 teaspoon vanilla 3/4 cup evaporated fat-free milk Ginger-Chocolate Crunch 1. Preheat oven to 350°F. Lightly grease a 1-1/2-quart souffle dish, 8-inch springform pan, or 8 4-ounce ramekins; set aside. For filling, in a medium bowl, combine pumpkin, sugar, honey, and pie spice. Add eggs and vanilla. Beat lightly with a fork just until combined. Gradually stir in evaporated milk. Pour into prepared dish, pan, or ramekins. If using a springform pan, place on a foil-lined baking sheet. If using ramekins, place in a 15x10x1-inch baking pan. 2. Bake for 45 to 50 minutes for dish or pan or 30 to 35 minutes for ramekins or until center appears set when gently shaken. Cool 1 hour on a wire rack. Cover and chill at least 2 hours or up to 24 hours before serving. 3. Top with Ginger-Chocolate Crunch. Bake, uncovered, in a 350°F oven for 4 to 6 minutes or just until chocolate is softened slightly. If using a springform pan, loosen pumpkin from sides of pan by running a thin metal spatula around the edge. Remove sides of pan. Cut into wedges to serve. If using souffle dish, spoon pumpkin out of the dish onto serving plates. Ginger-Chocolate Crunch: Top chilled pumpkin mixture with 8 gingersnaps, broken. Then top evenly with 2 ounces dark or bittersweet chocolate (60 to 70% cacao), chopped; and 2 teaspoons finely chopped crystallized ginger. Doesn't that sound so good! I can't believe that I have turned into a pumpkin lover. Wow! I just looked at the time and I need to get organized and ready to take Zoe to dance and then off to Target to look for Halloween Costumes. It might be a fun night to go out for pizza as well, we shall see how we are doing. Maybe a stop at Tony C's would be a nice way to top the week off.
