Banana Flax Seed Bread
What's the first thing you want when the weather is cold and rainy? In my book, right after hot steamy soups comes fresh baked breads right out of the oven, Mmmm!It's been a long and tiring week filled with icky weather, the weekend promises to be about the same. For tonight, it's time to relax and enjoy! I know - let's bake! How about a healthier version of banana bread, sound good to you? Ingredients (for mini loaf, double for regular loaf)1/2 cup organic brown sugar1/4 cup butter1 egg1 tablespoon flax seed1/4 cup sunflower seed2 mashed ripe bananas1 cup all-purpose flour1 1/2 tsp baking powderdash of saltCream together sugar and butter, add egg and beat well. Stir in mashed bananas. Add flour, baking powder, salt and blend. Mix in flax and sunflower seeds, spoon into mini loaf pan. Bake at 350 degrees for about 40 minutes or until done.
