Banana Peach Mango Crumble

Gearing up for Earth Hour 2009!

Anna is hosting a great event, Earth Hour 2009. She explains, ?At 8:30PM on Saturday 28 March millions of people around the world will unite and switch off their lights for one hour, Earth Hour.? For the event, we are to cook a recipe that can be enjoyed by candle light and has a low carbon footprint. This means the dish is made from local ingredients and with minimal packaging.

Since I am living in Georgia, known for peaches, I decided to include the juicy fruit in my Earth Hour candle light (after dinner) meal. To limit packaging, I decided to tweak the recipe I found slightly and use all fresh fruit.

This was a delicious end to a meal that didn?t leave us feeling full or on a sugar high. Well, I actually ended up on a sugar low, of sorts, since I have that whole can?t-eat-brown-sugar thing. I was out like a light in no time! Some dinner host I was??Hey, here?s the food! Now, can you let yourself out while I pass out??

Banana Peach Mango Crumble
An adapted Sandra Lee recipe

2 bananas, cut into 1-inch thick slices
1 ½ cups peaches, cubed
1 ½ cups mango, cubed
½ cup brown sugar
¼ cup white grape juice
2 tbsp. cornstarch
5 ladyfingers*

Preheat oven to 350ºF. Spray an 8-inch pan or 8 ramekins with cooking spray and set aside. In a large bowl, combine/stir all the ingredients except the ladyfingers and pour into the prepared baking pan. Crumble lady fingers over the fruit.

Bake for 45-55 minutes, or until the fruit is tender and the edges are bubbly. Serve warm.
*The original recipe said to crumble donuts over the top. I couldn't do that.


Don?t forget?. switch off your lights, your computer, your non-essential appliances, take everything off standby and join the world in one hour of beautiful candle light for Earth Hour on March 28th at 8:30PM.
