Bean, Egg and Cheese Quesadilla
Good Evening! I had a great last day off with the kids! They are excited to go back to school (I am so lucky... they love school so far and hope they keep up the enthusiasm.) I try to keep my expectations out of the equation regarding school and take it year by year. This year they both got fantastic teacher's and they are really thriving in school. Last year was a bit tough... and I wish I had spoken up about a few things but I am learning how to navigate the system. The kids had a great time playing outside with cousin Henry today! This is a classic picture of them all in their fort plotting out their next adventure. Very cute. For dinner, I went the quick route and made various quesadillas. Cheese and Pulled Pork for Emmet, Pork and BBQ Sauce for Zoe and a Bean, Egg and Cheese Quesadilla for me! This was super filling and delicious! Bean, Egg and Cheese Quesadilla 1/4 cup of Fat-Free Refried Beans 1/4 cup of Liquid Egg Whites cooked 1/4 cup of 2% Milk Mexican Cheese 1 La Tortilla Factory Smart & Delicious Whole Wheat Tortilla Scramble the egg whites over medium heat in a non-stick skillet sprayed with cooking spray. Remove from heat and add tortilla topped with refried beans, cheese and the eggs. Fold over into quesadilla and cook until cheese melts. Remove and serve with: Green Hatch Chile Salsa Picante Salsa a dab of Fage 0% Greek Yogurt This was total comfort food.... ooey, gooey and good! Not a whole lot of veggies today... will have to work on that tomorrow. This would make a great breakfast or lunch as well. Super satisfying. I have decided that I am going to let myself have a few select pieces of Easter candy this evening. I really find that if I am RADICAL and say I am not going to eat dessert then I over do it... either with dessert or in a different area... such as eating too much cereal! I make up for it one way or another. The kids got the most delicious chocolate covered cararmel eggs and chocolate covered mint eggs. If I must indulge I am going to have 2 of both and possibly a Double Dipped Chocolate Malt Ball. That should do me... sorry no pic... just in the contemplation stage. I realize I talk a lot about my Dessert issue but am resolved to the fact that I am not ready to let that go yet. Things evolve over time... but right now.. I am holding on to that little piece of daily joy. We have another busy week ahead, my Mom is coming into town and it is my nephew Henry's Birthday on the 16th. A lot of hoopla is about to ensue, so I am going to need to Breathe and do a lot of yoga this week! Have a great evening. related searches : Bean
